It works well as a dessert or as your main meal.
You can toss raw millet into cookies, muffins, quiche or granolas for extra crunch
How to prepare
To cook:
- Combine 1 part of millet with 2 parts of water in a covered pot
- Bring to a boil
- Cover and simmer for about 25 minutes on a low heat
- Stir frequently whilst cooking, occasionally adding water, until desired texture is reached
- Fluff with a fork when done – millet prepared this way will have a light texture similar to rice
Note: For a creamier porridge with a polenta-like consistency that is great for breakfast – use 3 parts of water instead of 2 and stir much more frequently.
You can slice this version as you would polenta and fry it into croquettes or savoury squares!
Optional:
Toasting the millet prior to cooking can provide a nuttier flavour and better texture.
To dry-toast:
- Place in a preheated frying pan or skillet
- Toast over medium heat for about 10 minutes
- Stir frequently, until the grain becomes golden brown and the grains become fragrant
To roast
- Add 3 parts of water to 4 parts of grain and place in a heavy pan
- Bring to the boil
- Cover and simmer for approx. 20 minutes
