How to enjoy

Millet can be used to bake bread, make porridge, make an alternative to potato mash or used in place of rice or quinoa.

It can be used to thicken soups or as a base for warm salads.

Millet can be eaten with your favourite dishes – it will prove a delicious side regardless of whether your meal is sweet, sour or salty.

It works well as a dessert or as your main meal.

You can toss raw millet into cookies, muffins, quiche or granolas for extra crunch

How to prepare

To cook:

  1. Combine 1 part of millet with 2 parts of water in a covered pot
  2. Bring to a boil
  3. Cover and simmer for about 25 minutes on a low heat
  4. Stir frequently whilst cooking, occasionally adding water, until desired texture is reached
  5. Fluff with a fork when done – millet prepared this way will have a light texture similar to rice

Note: For a creamier porridge with a polenta-like consistency that is great for breakfast – use 3 parts of water instead of 2 and stir much more frequently.

You can slice this version as you would polenta and fry it into croquettes or savoury squares!


Toasting the millet prior to cooking can provide a nuttier flavour and better texture.

To dry-toast:

  1. Place in a preheated frying pan or skillet
  2. Toast over medium heat for about 10 minutes
  3. Stir frequently, until the grain becomes golden brown and the grains become fragrant

To roast

  1. Add 3 parts of water to 4 parts of grain and place in a heavy pan
  2. Bring to the boil
  3. Cover and simmer for approx. 20 minutes
