Why eat Organic Buckwheat?

Buckwheat breaks down slowly during digestion due to its high fibre content, so it is excellent for diabetics, as it helps to keep the blood sugar levels balanced.

It is considered one of the best natural detoxifiers and appetite balancers, since the body digests buckwheat slowly, keeping surges in appetite under control.
The highly soluble fibre supports the body to lower cholesterol levels.

Organic Buckwheat is naturally high in powerful antioxidants such as Vitamins B2, B3 and a source of Vitamins B5 (Pantothenic Acid) and B9 (Folate) – it promotes the secretion of feel good hormones such as serotonin, dopamine and norepinephrine.

The vitamins are also crucial for energy metabolism, playing a substantial role in the breakdown of foods into energy we can use.

Completing the impressive nutrient profile of Buckwheat are the antioxidant minerals so crucial to your immune system: Zinc, Copper and Manganese.

Your body needs Copper to make healthy white blood cells and Zinc to make T-cells – a type of white blood cell that fights off foreign invaders in your bloodstream.

Manganese is a key component of the antioxidant enzyme Superoxide Dismutase (SOD) which is your body’s primary antioxidant and forms the most potent defence against free radicals and the ensuing inflammatory reactions.

Buckwheat is also very low in saturated fat, cholesterol and sodium.

Toast buckwheat to make Kasha – a traditional dish in several different cultures. Kasha may be used as a meat extender or as an ingredient in breakfast cereals, soups, and energy bars for athletes.

For those practising a Raw Food Diet, raw and soaked buckwheat can be enjoyed in many recipes such as granola, cakes, cookies, crackers and other bread-like products as buckwheat is a good binding agent and when soaked becomes very gelatinous.

Organic Buckwheat – naturally having no gluten-containing ingredients – is perfect for those on wheat- and gluten-restricted diets.

Buckwheat works wonderfully with a practically limitless array of spices, herbs, vegetables and other cooking ingredients.

How to Prepare

Note: whole grains should be rinsed and drained prior to soaking and sprouting.

To cook:
  1. Rinse
  2. Place in a pan and add double the amount of water with a little salt
  3. Cover the pan and bring to a simmer on medium/low heat for 10-15 minutes until all the water has been absorbed or until at desired texture
  4. Drain in a colander
To make Kasha:
  1. Add small batches of buckwheat groats to a large skillet and cook over medium-high heat – do not add oil or fat
  2. Stir the groats constantly for 4 to 5 minutes – the time can be reduced or lengthened depending on how much of a toasted flavour is desired.
  3. Cook with hot liquid cooking techniques (boiling)

Organic Buckwheat can be milled into whole grain flour on demand.
