Spelt has a simple genetic structure that has not been hybridised like current-day wheats.
It contains a water-soluble form of gluten that is easily digested.
Organic Spelt has more protein and fibre than wheat, and the protein in spelt is easier to digest, therefore it is a great alternative for anyone who is wheat-intolerant.
Spelt has a low glycaemic index and is suitable for vegetarians and vegans.
